L’Ambroisy has been welcoming guests since 2015 in Vence, nestled in the cosy and elegant setting of a dining room adorned with stone walls. The chef, Bruno SEILLERY, proudly displays his membership in the Escoffier Disciples Association. He works in the kitchen and enjoys sharing his expertise, creativity, and culinary boldness with his diners.

L’Ambroisy is nestled in the heart of Vence, within a former 17th-century seminary chapel. Its two rooms, adorned with stone walls, exposed beams, and vaulted ceilings, are enhanced by stunning contemporary artworks that add a touch of charm.
The first room, bathed in light thanks to its large picture window, offers a breathtaking view of the majestic Baou of Vence. It exudes a cosy, slightly refined atmosphere, with well-spaced tables and delightful décor that perfectly complement this enchanting setting.

Bruno Seillery
Bruno Seillery grew up in the gourmet world of gastronomy. Coming from a family passionate about cooking, he spent much of his life cultivating this family heritage. For many years, he shared the reins of the renowned family restaurant “La Prairie” in Paris with his brother.
When the business was eventually sold by his father, Bruno saw it as an opportunity to explore new horizons and embark on a personal adventure. This was when he felt an irresistible attraction to the south of France, particularly to Menton and its hinterland – places rich in childhood memories and landscapes that had always enchanted him during his holidays.
Determined to write a new chapter, Bruno began searching for a business to take over, armed with a vision and undiminished passion. After several months of searching, he fell in love with a small restaurant nestled in the old town of Vence. The location quickly won him over: the beauty of the dining room, the history embedded in the walls, and the convenience of a nearby car park made the place irresistible.
And so, in 2015, L’Ambroisy was born, the result of Bruno’s dream and his deep desire to continue sharing his love of gastronomy in a warm and authentic setting.

After an exceptional career in prestigious Parisian establishments, Alexandre Seillery joined the kitchens of Ambroisy Vence in 2023 to work alongside his father, Bruno Seillery.
Drawing from his experiences with renowned chefs such as Julien Dumas at Lucas Carton, Alexandre brings a breath of modernity and bold creativity to the family restaurant.
Alongside Bruno, an experienced chef, Alexandre creates menus inspired by the seasons and local produce, blending respect for tradition with culinary innovation. Together, father and son share the same commitment to excellence, transforming each dish into a unique gastronomic experience, where the flavours of land and sea are revealed in their purest form.
Through this collaboration, the cuisine at Ambroisy takes on a new dimension, uniting two generations with a shared love of taste and tradition, to offer an authentic dining experience full of emotion.
Après un parcours exceptionnel au sein de prestigieuses maisons parisiennes, Alexandre Seillery rejoint en 2023 les cuisines de l’’Ambroisy Vence pour épauler son père, Bruno Seillery.
