The restaurant
Since 2015, L’Ambroisy, a gourmet restaurant located in the heart of Vence, has been welcoming guests to an exceptional setting: a former 17th-century chapel, enhanced by exposed stone, elegant vaults, and a decor that blends tradition with contemporary simplicity. The atmosphere is both intimate and warm, perfect for savouring fine cuisine, with breathtaking views of the Baou.


Chef Bruno Seillery
At the helm of the kitchen, Bruno Seillery, a Disciple of Escoffier, has found the perfect setting in Vence to fully express his culinary art. After running the family restaurant “La Prairie” in Montreuil, he now dedicates himself to an elegant Provençal cuisine, elevated by touches of inspiration from elsewhere, particularly Asia, offering flavour combinations that are both bold and refined.
Since 2023, he has been joined by his son Alexandre, who brings experience from prestigious Parisian kitchens. Together, they create a harmonious blend of tradition and innovation, combining classical expertise with contemporary creativity.
Authenticity at the Heart of the Plate
The menu features only wild fish, caught using traditional fishing methods from Brittany, Vendée, the Basque Country, and Saint-Jean-de-Luz.
As for the olive oil served at the table… it’s simply extraordinary, produced in the Alpes-Maritimes by the Lessatini estate, a family-run olive farm perched on the hills of Nice.
The cheeses are carefully prepared by Thomas Métin, a renowned cheesemonger from Vence, highly regarded by lovers of fine cheeses. Enjoy them plated and savour these creations, aged with passion.
The desserts are full of originality and all homemade by the chef, such as the delicious strawberry “Pavlova” from Carros that will melt in your mouth with pleasure.

The menu is bursting with a variety of flavours, and over time, some recipes have become “signature dishes” highly praised by the restaurant’s regulars!
Take, for example, an excellent pigeon with red fruit vinegar and carrots, glazed sweetbreads, lobster ravioli, or Iberian pork presa served with spelt risotto.
Creamy mascarpone, lime encased in crisp sweet pastry, a subtle touch of vodka, and a refreshing sorbet: discover the Ambroisie, a divine dessert that truly lives up to its name.
